Motor rebuilt this year (less than
40 hours on it) plugs and oil changed since rebuild.
Comments:
I am dismantling the steering cables
from the wheel back to the rack and pinion (they are worn and rusted
almost solid and the gears are starting to strip). I want to replace
all parts from the wheel back to the rack and pinion. My problem is
that I do not know how to dismantle the steering cable from the rack
and pinion unit. I have the MerCruiser book for my year and setup but
it does not get into the disassembling process. Can you tell me what
has to be done and recommend a replacement unit to connect to the rack
and pinion??

There are several common types and
manufacturers of steering systems. The most popular are rack/n/pinion
and rotary.

There are three major
manufacturers and several that are out of business. (Morse, Tele-flex,
U-flex, Det-Mar, etc.) Each has it's own assembly procedures and
technique.
Due to production costs and packaging,
it is less expensive to purchase the helm assembly and the steering
cable as a kit then to buy just the service replacement cable by itself.
A Morse rack/n/pinion steering kit starts at $147 to $160.

to measure: and/or look at the printing on the cable for dimensions.
The cable length is usually listed in inches, on the cable.
Once you have the new cable kit; you
will be able to see how it is assembled and it also comes with
instructions.
